S'MORES PANCAKES

Oh my gosh. I love pancakes and I love Saturday mornings so it goes without saying that they go hand-in-hand, right? We woke up this morning to rain and 19 degrees and I felt like fully embracing fall. I lit a candle, made a pot of pumpkin chai, and whipped up these pancakes. Trust me, you'll be asking for s'more after they're all gone! ;)

Andrew and I have a strong appreciation for tea, but we don't drink much in the summer since it's so hot. Now that the temperatures are cooling down we've been pulling out our old favourites. David's Tea pumpkin chai is a frontrunner this time of year and paired nicely with these pancakes!

I've been pinning recipes to my baking Pinterest board like crazy this morning, so I can't wait to spend more time in the kitchen in the coming weeks! Now, here's the recipe for this S'mores Pancakes adapted from Pastry Affair.

S'mores Pancakes
1 cup all-purpose flour
1/2 cup graham cracker crumbs
1 tbsp baking powder
pinch of salt

1 1/4 cup milk
1 egg, whisked
1/2 cup chocolate chips
1/4 cup mini marshmallows

1. In a large bowl, whisk together dry ingredients. Add milk, egg, chocolate chips, and marshmallows and mix just until combined.

2. Heat a large non-stick skillet and ladle pancake batter into pan. Cook until sides bubble and then flip - both sides should be golden brown.

3. Plate and serve with maple syrup and/or butter! PS. how cute is the little bottle of maple syrup? It was a wedding favour!

Let me know if you give these a try! Alternatively, if you have any favourite fall recipes I'd love to hear them! Fall truly is the greatest season.
