Veggie Burritos

I will be the first to admit that I have an unhealthy love for burritos, but $7 every time I buy one from mucho burrito can add up quickly. so I decided it was time to make them at home. and for $7, I can get five or six burritos out of my ingredients rather than just one! 



I love going to the grocery store. last night I spent an hour just wandering the aisles trying to decide what to buy. I had a few things in mind but part of the fun is looking at everything and dreaming up what you could create with it. 



these were SO EASY. it took me all of 10 minutes to make them. while the rice was boiling I sautéed the peppers and after they were done, I warmed the tortilla in that pan. my only problem is that the tortillas I bought are too small to fold with all the goods inside. my plan was to fold it and then put the folded side flat in the warm pan to seal it. that didn't happen and it's a good thing I ate without an audience because it got pretty messy!

onto the ingredients:
1/2 cup of basmati rice
1 green pepper
19oz. can of black beans
shredded cheese, sour cream and salsa

boil the rice until cooked. sauté the peppers in a frying pan over medium heat. drain black beans and rinse. once the rice is done, fill your tortilla shell and eat away! ingredients can vary. moral of the story: you should make these.

I realize I keep promising that I will update this more, but I think it's time to admit to myself that work is taking a big chunk of my time and by the time I get home, cooking isn't on the top of my priority list. we will see what is to come in the next few weeks!
