SHORTBREAD BITES

Everyone loves a classic shortbread cookie, right? I've seen the shortbread bites all over Pinterest leading up to the holidays so I thought I'd give them a try! 

Are you ready for the holidays? My two weeks off from work started today and I couldn't be more excited. Although there is lots of traveling ahead as we share time between both families, I am really, really looking forward to time with those that are important to me.

But on to the cookies! 3 ingredients, 15 minutes in the oven and bam! An easy, sweet, and festive treat. 



Shortbread Bites adapted from Baked Perfection
1 1/4 cup all purpose flour 
3 tablespoons granulated sugar
1/2 cup cold butter, cut into pieces
handful of sprinkles, if desired

1. Preheat oven to 325*F. In a food processor, add flour and sugar and pulse until combined.  Add in cubed butter and pulse into dough forms. Remove dough from the food processor and form into ball. 

2. On a floured surface, roll out the dough to square shape, roughly half an inch thick. Using a sharp knife, trim the edges off the dough to form a perfect square and cut into desirable size pieces. 

3. Bake cookies for 15-20 minutes, depending on size and thickness of cookies (these baked for 16 minutes). 



I have a lot of baking to do once I get to my parents house on Sunday! I can't believe Christmas is just a few sleeps away!
