Homemade Granola

my life has been undeniably busy for the last month but today I finally had a day off at home and used it to grocery shop and spend time in the kitchen. I've been working like crazy at my job at the student card office and between my trip to fredericton (oh my gosh, someone take me back to the east coast so I can fully explore and enjoy all of it asap) and everything else going on, my baking has come to a complete halt. 

anyway, today I made homemade granola to enjoy with the new president's choice greek yogurt (honey flavour mmm). oh man, to die for. this was easy and I picked up all the ingredients at bulk barn! I've decided that this year (my fourth year of university, jeez where has time gone!) I'm going to eat healthy, take lunch everyday (another tim horton's bagel and I will explode) and be positive. 

lindsay and I are hoping to take a yoga class and between eating healthy, working out and keeping my brain active with school, it should shape up to be a decent year.


here is the recipe:


3 cups of rolled oats
½ cup unsweeted coconut 
½ cup slivered almonds, chopped 
½ cup craisins
3 tsp brown sugar
pinch of salt 
½ teaspoon of ground cinnamon 


2 tbsp oil
1/3 cup honey
1 tsp vanilla 

mix the dry ingredients together in a bowl. meanwhile heat the oil, honey and vanilla in a saucepan on medium heat. whisk together and then pour over mix. fully coat all of it and then spread it on a cookie sheet and bake for 30 minutes (mixing half way through) at 325*f. 

delicious and definitely something I'll make often as a healthy alternative!
