MASON JAR BURRITO BOWLS

I'm always on the hunt for lunch ideas. I try to make our lunches as balanced and healthy as possible but it's a weekly struggle to find something exciting, easy, and nutritious. Andrew is a fan of the old fashioned sandwich, but I'm always looking for something more! 

That's when these burrito bowls were born! Simple, customizable, and not too bad on the eyes either! I like the mason jar because you can prep all of these at the beginning of the week and store them in your fridge for easy grab 'n go meals.








Mason Jar Burrito Bowls
Serves 6

225g quinoa (ours is a bulgar and quinoa blend)
19oz black beans 
16oz frozen corn
fresh salsa
chili powder, to taste
cilantro
sour cream, if desired
grated cheese
lime, to taste

1. Cook your quinoa as per the packet instructions. After the quinoa has cooled, squeeze in the juice of one fresh lime and add chopped cilantro to taste. 

2. In a jar layer your quinoa, beans, corn, salsa, and chili powder. If desired you can add the sour cream but I add it at lunch time with the grated cheese.

3. Stir or shake to mix everything up and enjoy!

It's really that easy. You could definitely add chicken, steak, or fish if you wanted to give you more protein but I eat like a vegetarian 95% of the time so I chose to omit it! We had leftover chicken from the weekend so I added it to Andrew's for the week.
